What is malt?

Malt, written in Chinese characters as "malt (bakuga)," refers to germinated 2-row barley that has been "roasted" to make it into beer.

 
Alcohol, an essential ingredient in beer, is produced when yeast eats sugar.

Two-row barley does not originally contain sugar, but germination activates an ingredient called amylase, which breaks down the barley starch and produces sugar.

 
The process of drying germinated two-row barley by sending hot air through it to stop germination is called "roasting.

The way in which the beer is roasted greatly affects its flavor and aroma.

 

Malt Types

Malts can be divided into two main categories.

 
One is "base malt," which is the source of alcohol and carbonation.

Base malt is roasted at a low temperature of about 80°C for a long time, and as the name implies, it is the base malt of the beer.

In general, about 80~901 TP3T of the beer is made up of base malt.

 
The other is "special malts" that give the beer character.

This one is made by roasting at a high temperature of 100°C or more, which caramelizes the sugar in the malt and produces a unique aroma.

The degree of caramelization varies depending on the time and temperature of roasting, resulting in unique aroma, richness, and color.

 
Special malts" are sometimes further classified as "caramel malts" or "roasted malts" depending on the degree of roasting.
