What is Ramsin?

Lamb shin is the core meat of the "rump," which is the part from the waist to the hips following the sirloin.
The most tender and flavorful of the thighs, this is a rare, lean, rare part of the meat.
The tenderness and juiciness of the meat is excellent, making it one of the most popular cuts of red meat preferred by professionals.
